The legend of Hoppin' John has been told many different ways -- no one seems to know who John was, while some say the name Hoppin' John is actually based on a French name for this dish. But regardless of how the legend came about, it's an easy and delicious dish that sticks to your ribs and keeps you warm in the coldest winter days and nights, especially on New Year's Day.
