Cast Iron Oven Baked Potatoes

You’ll never be satisfied with microwave baked potatoes, once you’ve tried oven baked potatoes in a cast iron skillet. Here's how to make these.

Place a cast iron skillet into the oven, and preheat the oven and the skillet to 425°F.
Scrub and dry off the potatoes.
Rub a coating of olive oil over the entire surface of every potato.
Poke the potatoes with a fork, to allow some steam to escape.
Generously add kosher salt to the tops and bottoms of the potatoes.
Place the potatoes into the ripping hot cast-iron skillet, and bake at 425°F for at least 45 minutes. When the potato skins are wrinkled, they are done.
Let them cool for at least a few minutes, and serve. You can smother the potatoes with any toppings you want. However, I like these with just some cracked black pepper and a little butter.

Russet potatoes may be the best kind to use with baked potatoes, but I used yellow golden potatoes here. When thoroughly cooked like this, their waxy texture was as good as butter.
