I've been trying to be calorie conscious lately, and I wanted to try making mashed potatoes without milk. The result was actually quite good. After boiling the potatoes in salt water, we add ground pepper, garlic powder, and smoked paprika because I love smoked paprika, a little basil, a lot more parsley, and chicken broth. The chicken broth really brings it together, and combined with the garlic and paprika, gives this dish a savory taste that isn't like typical mashed potatoes with milk and butter, but it's something a little different that I'd gladly make again and serve to guests.
