Merry Christmas! Tonight on Cast Iron Wednesday, we'll be unboxing and christening a very special present opened today: the Lodge Cast Iron USA Enamel 7.5 quart dutch oven. This beautiful piece is meant to compete with Le Creuset and Staub in the "high quality" (and high priced) cast iron enamelware market, and I am looking forward to putting it through its paces. That's why tonight we'll be making a classic Italian dish in this pot: Osso Buco, braised beef shank. Man, do I have story to tell all of you about this particular cast iron piece...a story that I certainly won't forget. At the very least, I hope you find it entertaining.
