I pour a mixture of milk and sour cream into a clean jar and pour the rest of the warm milk to it, mix everything well, cover the layers of gauze folded in several layers, wrap the jar with a towel and leave it at room temperature for 12 hours or overnight. After the milk has stood for 12 hours or night, I check the milk condition, I carefully lower the spoon into the milk until the middle of the mass and gently pull out the spoon, I try not to damage the consistency of the mixture. If the milk after 12 hours is still liquid, mix the mixture and again leave to stand for several hours (the process of availability depends on the room temperature). If you take out a spoon, there remains a trace of thickened milk (curdled) kefir ready.
