Summer, on these hot days, you want something light, cool and moderately sweet dessert that can be prepared quickly and without baking. Currant cheesecake with currants is made from affordable products! An excellent combination of cottage cheese with sour cream and currants in sweet jelly. Yummy! Everyone really liked it!
To prepare it, we need:

RECIPE:
For the base:
Shortbread cookies - 180 grams;
Butter - 90 grams;

For the berry mousse:
Black currant - 300 grams;
Sugar - 100 grams;
Water - 30 ml;
Gelatin - 12 grams;
Water - 70 ml.

For curd mousse:
Cottage cheese - 400 grams;
Sour cream 20% - 150 grams;
Sugar - 85 grams;
Vanilla sugar - 1 tsp. spoon;
Gelatin - 12 grams;
Water - 70 ml.

PREPARATION: I immediately pour gelatin with water at room temperature to swell.

1. I grind the cookies into crumbs using a blender.
2. Pour melted butter into the cookie crumbs, mix. I shift the resulting mass into a mold with a diameter of 18 centimeters and compact along the bottom of the mold. I prepared the form in advance, covering the bottom with parchment, and the sides with confectionery film. I put the mold in the fridge.
3. Cooking berry mousse. Pour 30 ml of water into the ladle, add sugar. Bring to a boil and dissolve the sugar. Pour currants into boiling syrup. I boil the berries in syrup over medium heat for about 7-10 minutes. Remove from heat, pierce with a submersible blender, pour in the swollen gelatin and mix everything well. I let it cool down to room temperature.
4. Now I start cooking curd mousse. I put cottage cheese, sour cream, sugar and vanilla sugar in a separate container. I also interrupt with an immersion blender until a homogeneous mass is obtained. I pour the swollen gelatin warmed up in the microwave into the curd mass. Once again, mix the whole mass with a blender.
5. I start assembling the cheesecake. On a chilled sand base I spread randomly one tablespoon of the curd and berry mixture. Then, using a wooden skewer, I make a drawing.
6. I cover everything with cling film and put it in the refrigerator to fix it for 5 hours, and preferably at night.
7. I remove the finished cheesecake from the mold, cut it into portioned pieces and serve the dessert to the table.
8. Have a nice tea party!
