RECIPE:
Eggs (C1) – 3 pieces;
Sugar – 100 grams;
Kefir – 300 ml;
Semolina – 300 grams;
Coconut flakes – 60 grams;
Butter – 50 grams;
Baking powder – 10 grams;
Vanilla sugar – 1/2 teaspoon;
Salt – ¼ teaspoon;
Apricot – 6-7 pieces.
For sprinkling:
Butter – 20 grams;
Sugar – 25 grams;
Flour – 25 grams.
PREPARATION:
1. In a container, combine semolina, coconut flakes, kefir and mix everything. Leave for 20 minutes to swell.
2. In a separate container, mix butter, sugar, flour, and rub the mixture into crumbs with your hands.
3. Pour eggs into a bowl, add vanilla sugar and a pinch of salt. Beat until a cap of air bubbles forms. Add all the sugar and continue whisking until a homogeneous stable mass is obtained and the sugar is dissolved.
4. Add swollen semolina with coconut flakes to the beaten eggs, pour in melted butter and baking powder. Mix everything well so that there are no lumps.
5. Wash the apricot, divide it into halves and remove the pits.
6. Place a little dough into a 22x22 cm pan lined with parchment and smooth it out. Place the apricot on the dough. Place the remaining dough on top, smooth the surface and sprinkle with sprinkles.
7. Bake in a preheated oven at 180 degrees for 35-40 minutes until done.
8. Let the pie cool on a wire rack, cut into portions and serve.
