Indulge in the rich flavours of Red Tilapia in Coconut Sauce. This delightful recipe features tender tilapia fish, perfectly fried to golden perfection, and immersed in a creamy, aromatic coconut sauce infused with a blend of spices. It's a tropical-inspired dish that's both easy to prepare and incredibly satisfying, making it a must-try for seafood enthusiasts.
Ingredients:
For Marinating:
Lime juice
1 whole Tilapia (cleaned and scaled)
1 tsp black pepper
Salt, to taste
1 tsp garlic powder
For Frying:
1.5 tbsp coconut oil
For the Sauce:
1 onion, finely chopped
1 tsp ginger, minced
1/2 tsp turmeric
1 tsp mild chilli powder
1/2 tsp black pepper
1/2 cup tomato puree
Salt, to taste
300ml coconut milk
Dash of lime juice
Instructions:
Marinating the Tilapia:
Using a sharp knife, make 2-3 diagonal cuts on each side of the cleaned and scaled Tilapia to help it cook evenly and allow the flavours to penetrate.
In a bowl, combine 1 tsp black pepper, salt (to taste) & 1 tsp garlic powder
Coat the seasoning on the fish and marinate the fish for at least 30 minutes, or for better flavour, marinate it overnight or 6-8 hours in the refrigerator.
Frying the Tilapia:
Heat 1.5 tbsp of coconut oil in a pan over medium-high heat.
Fry the scored and marinated Tilapia on both sides until it turns golden brown and cooked through. This should take about 4-5 minutes per side, depending on the thickness of the fish. Once cooked, set the fish aside.
Preparing the Sauce:
In the same pan, add finely chopped onions and minced ginger. Sauté them for a few minutes until the onions become translucent.
Add 1/2 tsp turmeric, 1 tsp mild chilli powder, and 1/2 tsp black pepper. Sauté for an additional 1 minute until fragrant.
Stir in 1/2 cup of tomato puree and season with salt to taste. Cook until the oil starts to separate from the mixture.
Gently place the scored and fried Tilapia into the sauce.
Pour in 300ml of coconut milk. Allow the mixture to simmer for a few minutes to allow the flavours to meld.
Finish with a dash of lime juice for a refreshing kick.
Serve your Red Tilapia in Coconut Sauce hot, garnished with fresh cilantro leaves if desired. Enjoy!
