INGREDIENTS:
For biscuit:
Flour - 120 grams;
Sugar - 120 grams;
Chicken eggs - 4 pieces (SB);
Baking powder dough - 1 hour. spoon;
Vanilla sugar - ½ tsp;
Salt - ¼ tsp.
For filling:
Pears - 800-900 grams;
Sugar -1 tbsp;
Corn starch - 1 tablespoon;
Lemon juice - 1 tablespoon;
Lemon zest -1/2 pieces;
Ginger - 1 tablespoon;
For sprinkling:
Powdered sugar - 1 tbsp. spoon.
COOKING:
1. Wash the pears, peel and grate on a coarse grater. It is better to take hard pears.
2. Pour sugar, lemon zest, ginger, cornstarch into the grated pear and pour in lemon juice. To mix everything. Adjust the amount of sugar to your liking and from the sweetness of the pears.
3. Pour chicken eggs into a separate container, beat with a mixer until small bubbles. Then add vanilla sugar and add sugar in 2-3 doses and continue beating at high speed for about 10 minutes, the mass should become lighter and increase in volume.
4. Pour sifted flour, baking powder and salt into the resulting mass through a sieve. Stir in the flour mixture with gentle movements from bottom to top so that the mass does not fall off, remains airy and free of lumps.
5. Cover the baking sheet with parchment. Put the filling on the parchment, smooth it out.
6. Spread the biscuit dough evenly over the filling.
7. Bake in a preheated oven to 180 degrees for 20 minutes. Adjust the baking time according to your oven.
8. Transfer the finished biscuit to the work surface and cover with a second sheet of parchment in the size on which the filled biscuit was baked. Turn the workpiece over to the second sheet. Remove the parchment on which the biscuit was baked. Helping with the second sheet of parchment, roll the biscuit into a roll, remove the parchment and let the roll cool. Sprinkle with icing sugar
9. Cut the finished roll into portions and serve with tea, coffee, kefir or milk.
