RECIPE:
Eggs (C1) – 2 pieces;
Sugar – 85 grams;
Butter – 80 grams;
Coconut flakes – 120 grams;
Flour – 120-140 grams;
Baking powder – 1 teaspoon;
Vanilla sugar – ½ teaspoon;
Salt – ¼ teaspoon;
Coconut shavings for sprinkling - 2 tbsp. spoons.
PREPARATION:
1. In a bowl, beat eggs with salt and vanilla sugar until a cap of bubbles forms. Add sugar and beat until a stable air mass is obtained and the sugar dissolves for 2 minutes.
2. Pour in the cooled melted butter, mix at low mixer speed.
3. Add coconut flakes and mix with a spatula.
4. Then add sifted flour and baking powder in portions, knead into a homogeneous, soft dough.
5. Lightly wet your fingers in water, take a portion of the dough, form a ball, and dip it in coconut flakes.
6. Place the blanks on a baking sheet with parchment at a distance from each other.
7. Bake in a preheated oven at 180 degrees for 17-20 minutes until golden brown. Adjust the baking time according to your oven.
8. Place the finished cookies on a plate and serve.
