We are preparing delicious airy Vienna buns with sourdough. The dough is very soft and airy. You can make these buns with Levito Madre if you have this starter. I will be making stiff sweet starter with 100% wheat starter, which we will re-feed into a sweet stiff starter overnight!
These buns are balanced in salt and sugar and go well with both soup and tea. They taste like a milk loaf!
Ingredients
Sweet stiff sourdough starter:
75 g wheat sourdough starter 100%
75 g white flour
25 g water
12 g sugar
Dough:
150 g white bread flour protein 12-12.7%
150 g white all purpose flour 10.5-11.7%
20 g sugar
4 g salt
200 g milk
30 g butter
