I am sharing the details of making sourdough bread to get fluffier bread. The recipe is suitable for beginners.
Ingredients:
350 ml warm water + 8 ml water for diluting salt
110 g thick active starter
450 g white all purpose flour with 11.7% protein (+ 1 heaping tbsp may be needed to bring the dough to the desired consistency, depends on the flour)
50 g whole wheat flour 14% protein
11 g salt
Bake in a hot dutch oven at 250C (500F) with the lid on for 25 minutes, then reduce the temperature to 220C (430F), remove the lid and bake for another 15 minutes.
