4 eggs
Envelope:
12 oz pork loin
1 tbsp light soy sauce
¼ tsp salt
¼ tsp ground pepper
1 tsp cornstarch
1 shallot
½ garlic clove
2 kaffir lime leaves or the zest of ½ lime
Tamarind dipping sauce:
1.5 oz palm sugar or white sugar
2 tbsp tamarind juice or 1 tbsp lemon juice
2 tbsp fish sauce
2 tbsp water
Breading:
1.5 oz all-purpose flour
2 eggs
1.5 oz panko or breadcrumbs
Frying oil
Topping:
2 shallots
0.5 oz cilantro
Dried chilis (optional)
