It is also known as "红烧肉" (Hong Shao Rou), which translates to braised red pork. The recipe is simple with few ingredients. The meat is simmered with soy sauce, sugar, and rice wine, resulting in a tender and flavorful dish.

1kg pork belly
4 tbsp Shaoxing cooking wine
2 tbsp sugar
3 garlic cloves
3 shallots
20g ginger
60cl water
2 tbsp vegetable oil
Seasoning sauce:
1 tbsp five-spice powder
2 tbsp light soy sauce
4 tbsp dark soy sauce
½ tsp salt
