1 lb + ½ lb eggplants
½ lb ground beef
2 tbsp white vinegar
1 tsp salt
2 tbsp cornstarch
½ tbsp miso paste
1 tbsp gochujang Korean chili paste
1 tsp chili flakes
1 tsp grated ginger
4 garlic cloves
2 mini peppers (or hot chilies)
1 tsp Sichuan peppercorns
¼ tsp ground pepper
1 spring onion
Vegetable oil
1 tbsp toasted sesame oil
Seasoning sauce:
1 tbsp light soy sauce
1 tbsp black rice vinegar
1 pinch of salt
½ tbsp sugar
½ tbsp cornstarch
½ cup + ⅓ cup water
