Soft and incredibly delicious Easter cakes
All ingredients should be at room temperature!
Ingredients for 4 Easter cakes with a diameter of 11 cm (~4,5").
Poolish:
125 ml warm milk
1 heaped tablespoon of sugar
10 g yeast
50 g flour
Dough:
the whole poolish
4 egg yolks
120 g sugar
½ tsp salt
Vanilla powder or extract
130 g cottage cheese (I have 1%, any fat content is suitable)
20 ml vegetable oil
60 g butter at room temperature
400 g flour
150-200 g raisins, candied fruits to taste
Sugar glaze/icing:
2 tbsp. water
100 g caster sugar (or until desired thickness)
Mix together until you have a thick white glaze.
Bake 180C (360F) - 20 -30 minutes
