Welcome to my channel. Learn how to make a mouth-watering Green Thai curry with the curry paste from scratch. It is creamy and so flavourful! Along with this, you can also learn to make the perfect fragrant jasmine rice. It’s a simple and delicious recipe which is super easy to make it. You got to try it out!

Recipe:
Ingredients-
For the Green Curry Paste-
• 4 Spicy Green Chillies
• 4 to 5 Bhavnagri Mirch
• 1 stalk of lemongrass, roughly chopped
• Zest of 1 lime
• 4 to 5 cloves of garlic
• 1 tbsp chopped coriander stem
• ½ inch galangal, peeled
• 1/2 tsp Turmeric Powder
• 1 tsp coriander seed powder
• 1/2 tsp roasted cumin seeds
• 1/4 tsp Black Pepper powder
• 7-8 shallots
• 1 kaffir lime leaf
• ½ cup coriander leaves
• 2 tbsp Oil (Helps preserve longer)
• Salt, to taste
For a Jain Version - You can skip the onion and garlic.

For the Green Thai Curry-
• 2 tbsp oil
• 150 grams silken Tofu
• ½ cup diced mushroom
• ½ cup diced carrots
• 1/2 cup diced red bell pepper
• 2 cup diced yellow bell pepper
• ½ cup blanched broccoli florets
• 3 tbsp Thai Green Curry Paste
• Water as required
• 300 ml Coconut Milk
• ½ stock cube
• 2 tsp jaggery
• 2-3 Kaffir Lime Leaves
• Few Basil Leaves
• Salt, to taste

For the Jasmine rice-
• 1 cup water
• 1 cup Jasmine rice

Method -
1. For the green curry paste, grind together all the ingredients into a smooth paste and use. You can freeze this paste and use later too.
2. For the green Thai curry, heat oil and add in the Thai curry paste and cook it on low flame until it turns nice and fragrant. You’ll see the oil separating and the colour getting brighter.
3. Then, add all the veggies along with some water and cook for a few mins.
4. Now, add salt, stock cube, coconut milk, kaffir lime leaves and jaggery. Mix well and cook it on low flame until it starts simmering. Keep stirring.
5. Finish with basil leaves, cook for 2-3 mins and remove from flame.
6. Serve in a bowl and add in the tofu. Put some curry on top of the tofu and it’s ready.
7. For the Jasmine rice, wash and soak the rice for 30-60 mins.
8. Then, cook in a pan with equal amount of water. Cover and let it cook on a low flame for 12-13 mins until all the water is absorbed.
9. Remove and let it cool completely for 10 mins.
10. Serve hot with green Thai curry and enjoy!
