🔮 Kaju Katli - 3 Simple ingredients (+ 2 optional) made a Kesariya version & it was soooo good. Loved the colour & the hint of pista.

Ingredients -
💡250 g Cashew (Make a powder & seive it)
💡3 tbsp Milk Powder
💡200 g Sugar (about 1 cup)
💡1/3 cup Water
💡1/4 cup Chopped Pista
💡A pinch of Saffron mixed with water
💡Varq for decorating

 
Method -
1. Make cashew powder by pulsing the cashew. Do this in small batches. Heat sugar with water and make a syrup having one-string consistency.
2. Now, add in the milk powder, cashew powder, saffron to the syrup and mix well.
3. Cook this on a low flame with constant stirring & chopped pistachios
4. Mix it all up and continue cooking until the mixture thickens and leaves the sides of the pan.
5. Transfer the cooked mixture onto a parchment sheet and knead it with the help of the sheet till it comes together like a dough.
6. Flatten it out and top with silver varq. Slice it like katlis and enjoy!!
 
🌟Vishesh Tippani-
Pulse & grind the cashew powder else it will become a paste & then it cannot be used
Sugar should be 1 taar chashni only. Do not make it thicker else Kaju Katli will not be soft
Once you put cashew, cook only for 2 to 3 minutes & it should not stick to the bottom
Once the mixture is on the parchment paper (NO BUTTER PAPER) Gently keep on scraping it using a spatula to it cools evenly & then knead it well.
Roll it out & once you have put the varq, wait for a little time until it cools completely to cut it
