Welcome to my channel. Today we’re going to make a classic Gujarati snack. Get ready for a flavour explosion! This Cheesy Garlic Locho recipe combines the classic Surat street food with a rich, creamy twist. Garlic, cheese, and spices come together in a mouthwatering snack that's easy to make and impossible to resist. Try it now! 🫶🏼

Ingredients-
•1 cup chana dal, washed and soaked for 1-1.5 hours
•¼ cup whole urad dal, washed and soaked for 1-1.5 hours
•2 tbsp poha, washed and soaked for 20 mins
•1 ½ tsp eno
•2-3 green chilli
•½ inch piece of ginger
•2 tbsp curd
•1/2 tsp turmeric powder
•Salt to taste
•Water, to adjust the consistency

Locho masala-
•1 tsp roasted cumin powder
•1 tsp Kashmiri red chilli powder
•1 tsp black salt
•½ tsp black pepper powder

To finish and serve-
•Chopped onion
•2 tbsp garlic Butter, melted (mix butter and finely chopped green garlic)
•Locho masala
•Chopped coriander leaves
•2-3 tbsp Grated processed cheese
•Sev bhujia
•Green Chutney, to serve

Method-
1.To start with, mix together all the ingredients for the locho masala and set aside.
2.Now, blend together all the ingredients for the locho, except eno and transfer to a bowl.
3.Adjust the consistency with water and whisk well. The consistency of the batter must be like that of pakora batter.
4.Add in eno and whisk again in one direction.
5.Transfer to a greased plate and steam for 15-18 mins in a preheated steamer on high flame.
6.Remove the lid and smother garlic butter, top with locho masala and grated cheese.
7.Cover the lid again for a minute or two for the cheese to melt.
8.Now, scrape the locho with a spatula and serve hot! Garnish with chopped coriander leaves, nylon sev and chopped onions.
9.Serve with green chutney and enjoy!

Vishesh Tippani-
•The Quantity of water is important. The consistency of the batter must be slightly thicker than buttermilk
•Do not mix for long after adding eno
•Always pre-heat the Steamer
•Serve hot, do not let the locho cool down
