Hi! My name is Irina Krikunenko and in this episode, together with Natalia Svintsova, we will cook Gazpachuelo. It has nothing in common with Gazpacho, despite the similar name. The homeland of this soup is sunny Malaga, a coastal city in the south of Spain, where fishermen could easily get all the ingredients for making this soup. That is why in the old days it was called “the soup of the poor”.
Natalia worked in a Spanish restaurant for more than 20 years and today she will tell not only about the habits of the Spaniards, breakfasts in cafes, siesta, but will also reveal the secret of preparing consomme (Spanish broth).
Ingredients:
2-3 potatoes
A dozen shrimps or langoustines
A few pieces of white fish (rosada, cod, etc.)
Homemade mayonnaise (2 eggs, 1 lemon, 1 cup of sunflower oil, salt)
⁃ rice is optional
Steps:
1. Bring water to the boil in a saucepan. Add the peeled and chopped potatoes.
2. While the potatoes are cooking, prepare the homemade mayonnaise. If you want to give it a garlicky flavor, add a clove of garlic. Blend all the ingredients for the mayonnaise (2 eggs, lemon juice to taste, 1 cup sunflower oil, salt) using a blender on maximum power.
3. Once the potatoes are boiled, add the shrimp and fish, cook for about five minutes.
4. Turn off the heat and allow the soup to cool slightly. Gradually add the mayonnaise, stirring well. Heat the soup over low heat, if it becomes too thick, add a little water and stir thoroughly.
