Dry Ingredients:
1/2 cup oat flour (or coffee grinded rolled oats, or whole wheat coarse flour)
1/2 cup coarse oat flakes
1/2 cup chopped almonds
1 tsp. cinnamon
1/2 cup sugar
1/4 cup dried cranberries
1 tsp. baking powder
1/2 tsp. salt
bag of vanilla sugar
Wet ingredients:
1/2 large banana
puree one green apple - peel off skin and seeds and put in blender (or grate on a fine grater)
3 tbsp. olive oil
cup means a glass for 240-250 ml.
Mix all dry ingredients in a bowl. Cut the banana into cubes.
Add the wet ones except the banana. Knead well, add the banana.
Let the dough stand for about 15 minutes. It should get quite thick, about the same as for cheesecakes. If the dough is too runny, add more flour.
Heat the oven to 180°.
On a baking tray lined with tracing paper, carefully place lumps of dough a few cm apart with a tablespoon.
Bake for 25-30 minutes until cooked through - the buns should be firmly browned. Leave them on the baking tray for a couple of minutes, transfer them to a wire rack to cool.
I used brown sugar. You can use less sugar for my taste.
Do not store the buns in a covered dish - they get soft!
