Hi! My name is Irina Krikunenko and in this video we are making cheesecake “San Sebastian”.

Cheesecake recipe
Ingredients:
600g cream cheese (e.g. Philadelphia)
200 g sugar
4 eggs
300 ml heavy cream (from 30%)
1 tbsp. flour
1 tsp. vanilla extract (optional)
A pinch of salt

Instructions:

1. *Prepare oven and molds:*.
Preheat the oven to 200-210°C.
Take a round baking dish (about 20-22 cm in diameter) and line it with parchment paper, leaving the edges of the paper high above the dish so that the cheesecake can rise.

2. Preparing the batter:
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, beating thoroughly after each.
Pour in the cream, vanilla extract and a pinch of salt. Whisk again until smooth.
Pour in the flour and mix gently.

3. *Baking.
Pour the mixture into the prepared mold.
Bake for 50-60 minutes. It is important that the top of the cheesecake be well browned, almost burnt, but the center should remain slightly liquid and “jiggly”.

4. Cooling and serving:
Allow the cheesecake to cool in the mold at room temperature and then remove it to the refrigerator for at least 4 hours, or preferably overnight.
Before serving, carefully remove the cheesecake from the mold and remove the parchment paper.
This cheesecake is especially delicious the next day when it's fully stabilized. Enjoy!
