Mac & Cheese

Ingredients:
500ml full fat milk
Spring of fresh rosemary
2 bay leaves
55g butter
35g plain flour
1 tablespoon English mustard powder
1 teaspoon ground mace
150g Cheddar Cheese grated
100g Gruyere Cheese grated
125g ball of mozzarella chopped
500g macaroni
2 finely chopped cloves of garlic
Seasoning

Mix together for the topping
100g breadcrumbs
100g parmesan grated
1 teaspoon paprika

Preheat the oven to 180c/fan 160. Butter a 30x25 7cm deep oven proof dish – a kind of lasagne type dish.

Bring a large plan of salted water to the boil, add the dried macaroni and boil for 7minutes. This will not be cooked just al-dente – strain and run under cold water to stop the cooking process. Drain well and set aside in a large bowl.
Put the milk in a saucepan with the rosemary and bay leaves. Bring to a simmer then set aside to infuse for 15 minutes. Then take out the rosemary and bay leaves add to a jug.
Now melt the butter in a pan over a medium heat, once melted reduce the heat and add the flour, mace and mustard powder. Cook stirring continuously for 3 minutes.
Take the infused milk and add slowly whisking continuously to make a smooth sauce. Simmer gently stirring till it is thickened. Lower the heat and add the gruyere, cheddar and garlic. Season to taste.
Add to the macaroni and add the mozzarella stirring it all together really well.
Add to the oven proof dish, sprinkle with the breadcrumb, parmesan and paprika topping.
Bake for 20 -25 minutes until the topping is golden and they are crisp and bubbling.
