Chorizo in Cider
Ingredients
3 tablespoons of olive oil
1 small white onion finely chopped
1 ½ teaspoons of paprika
125ml / 4 fl oz apple cider
60ml/ 2 fl oz chicken stock or bouillon
1 bay leaf
300g / 10 oz chorizo slice diagonally at about 4mm 1/4inch thick
2 teaspoons of sherry vinegar
2 teaspoons of chopped parsley

Methodology
Heat the oil in a pan to a medium heat, add the onion and cooked till translucent and soft, stirring occasionally, after about 5 minutes add the paprika.
Increase the heat add the cider, stock and bay leaf bring to the boil. Add the chorizo and reduce the heat and simmer for 5 minutes, once the sauce has reduced slightly add the sherry vinegar. Serve hot sprinkled with parsley.
