Spaghetti with Bottarga & Black Garlic!!! Date Night Dinner at Home! Pasta gourmet! A spectacular recipe! This gourmet dish is sure to please your family and loved ones. Buon appetito!
Always purchase bottarga – pressed fish roe – in a whole piece and grate it yourself for best results. Mullet bottarga has a more mild flavours, is a real treasure of the sea.

Ingredients for 4 persons:
0,7lb/320g of spaghetti.
1 head of black garlic.
0,11lb/50g of bottarga.
4 anchovies.
1 lemon with leaves.
Thyme.
Marjoram.
Garlic.
Chilli pepper.
Extra virgin olive oil.
Salt.
Black pepper.

Method:
Prepare a broth with water, salt, leaves and lemon zest. From boiling point, simmer for 20 minutes.
Clean the black garlic and blend with a glass of water, thyme and marjoram.
Clean the bottarga and cut 1/3 of it into strips.
Sauté oil, garlic and chilli pepper, add the anchovies and allow to melt. Add 2 ladles of broth, remove the garlic and reduce. add the black garlic water, another ladle of broth, throw down the spaghetti and cook adding broth when needed. Halfway through cooking, add a little grated bottarga. Stir with grated and sliced bottarga, oil and lemon broth.
Serve with plenty of sauce and bottarga.
