If you want to delete all the data from the health application in your iPhone as it is taking up too much space then what you do is go to "settings". Scroll down.
Go to this health option here. Go to "Data access and devices". Go to "Health" and then if you see there is an option here "Delete all data from health". So you can select this option and then Delete. Once you do it all the data from the health application that is stored in your iPhone will be deleted.
