Ingredients
8-10 lb. fresh apples
1/4 c. bottled lemon juice
1 1/2 c. White sugar
1/2 c. Red Hots Cinnamon Candies
2 sticks cinnamon
2 tsp. whole cloves
1 tsp. ginger
2 c. water
1 1/2 c. apple cider vinegar
2/3 c. light corn syrup
2 TB. red food coloring, optional

Instructions
Wash, core and peel apples.
Cut apples lengthwise into eighths.
Place in a bowl with lemon juice & cold water to cover.
Combine remaining ingredients in a large sauce pan and bring to a boil.

Drain apple wedges and add to syrup mixture; cover and simmer 4 minutes.
Pack hot apples into hot, sterilized jars, leaving 1/2 in headspace.
Ladle hot syrup over apples, leaving 1/2 in. headspace.
Remove air bubbles with a chopstick, or butter knife. Wipe the jar rims with a wet paper towel. Add the lids and rings till they’re “finger tight”.
Process 15 minutes in a boiling-water canner.
