Ligurian rabbit is a recipe much loved in my family but which I hadn't cooked for a long time. When I walked into the butcher shop today, and saw a very fresh rabbit, I immediately decided it was time to share my version of the original recipe with you.
There are several ways to cook Ligurian rabbit, my favorite version is the one with olives, which give the dish a unique flavor and a note of freshness and creaminess.
Ligurian cuisine is characterized by its simplicity and the use of fresh, seasonal ingredients. Ligurian meat recipes are very popular and Ligurian rabbit is one of the best known.
The original recipe calls for the use of simple ingredients such as rabbit, Taggiasca olives, parsley, rosemary and garlic. The preparation is simple and quick, but requires a long cooking to obtain a soft and tasty dish.
