In my "Max Makes Sandwiches" series, I have always aimed to transform the sandwich into a work of culinary art, and today's sandwich is proof that even the simplest of sandwiches can become a refined dish. The protagonist is the pork neck, a tasty meat that I cook until perfectly crispy, keeping it juicy and soft.
But a great sandwich doesn't live on meat alone. For this, I added Scapece courgettes, sweet and sour and crunchy, which complement the tenderness of the meat beautifully. And to unite it all? A generous amount of scamorza that blends gently with the heat of the meat, creating a mix of flavors that will make you want more.
