In my restaurant in Milan I had the pleasure of cooking for a special guest, Davide Paoli, aka "clessiolab", a true talent and, not surprisingly, also Apulian like the flavors I chose!

This pasta which is a hymn to the Puglia region: Pasta with the flavors of Puglia! Imagine a dish where every bite speaks of sun, sea and fertile land. I used only the best seasonal products, those that only Puglia can offer: extra virgin olive oil, juicy cherry tomatoes, crunchy courgettes and, of course, a touch of fresh basil and fresh ricotta and Parmesan for that irresistible cremeta!
I tried to transform these simple ingredients into an unforgettable experience for my friend @clessiolab. I won't reveal the process to you, because the magic lies in watching and being inspired, so run and see the video!
It will be interesting to see the reaction of Davide, an artist who with his personalized sneakers has demonstrated how art can transform even the most everyday objects into something unique, just like I try to do with my dishes.
