Since my last video (   • 양념치킨? 닭강정? 아님 둘 다? 닭가슴살로 만든 완벽한 양념치킨 ...  ), I've gotten a lot of requests for Korean-style sweet soy garlic chicken, so I decided to fulfill 100% of my subscribers' requests and make a really delicious sweet soy garlic chicken. Food is like that, everyone's tastes and preferences are so different, so I can't please everyone... but I think this is good enough to put out there, so I'm confidently releasing it. Please give it a try and let me know what you think 😄

I also got a lot of questions about the Frying powder (tempura flour), so I included the proper proportions for making tempura flour in the video, and I also incorporated the idea of garlic flakes from the comments. If there's anything else you'd like to see in the future, please let me know in the comments. [Chicken preperation]

350g chicken breasts

1/2 tsp salt

1/4 tsp black pepper powder

1/4 tsp curry powder

1/4 tsp ground cinnamon

100 ml milk

70g tempura flour (Mix with the milk)

130g tempura flour (Mix the tempura flour one more time)

1L frying oil

[Tempura Flour Recipe]

150g wheat flour

50g potato starch flour

1 tsp (4g) salt

1/2 tsp (2g) baking powder

1/4 tsp (1g) black pepper

[Making the Honey Soy Sauce]

1 Tbsp (15g) soy sauce

1 tsp (5g) oyster sauce

1 Tbsp (15g) mirin (rice cooking wine)

4 Tbsp (60g) honey or water yeast

1 Tbsp (10g) grated garlic

A few grinds of black pepper

half a green scallion

[Cooking Instructions]

1. Cut the chicken into bite-sized pieces, season and marinate in milk for about 30 minutes.

2. Make the honey soy sauce. Add the seasonings and boil for about 3 minutes, then let it cool before using.

3. In the bowl where the meat has been marinating in the milk, add 70g of the tempura flour and make a first thin batter.

4. in a wide bowl, add the tempura flour and dredge the chicken in the first batter, then coat once more in the tempura flour, shake well and deep fry.

5. Make sure the oil is at a temperature of 170-180 degrees and fry the chicken in two batches of 4 minutes each.

6. Once fried, drain the oil for about 5 minutes and spread the honey soy sauce on top of the fried chicken.

7. According to your preference, you can put whole sesame seeds, parsley, and fried garlic on top to make it more delicious and presentable.

[Cooking Tips and Alternative Recipes]

1. If you fry a large amount of chicken at once, the temperature of the oil will drop rapidly and it will take a long time to fry, and it may stick to the bottom and burn, so it is better to fry it in small portions.

2. Make a large batch of frying powder at once and store it for later use.

3. If you do not drink milk, do not marinate the ground meat in milk, but add 80g of tempura flour to 100ml of water to make a thin tempura batter, then add the chicken to it and continue the process.

4. You can also add tempura flour to a plastic bag (70g) and shake it to coat the meat with the first coat of tempura flour and then add the second coat of tempura flour. You can see more details in my previous sweet spice chicken video (   • 양념치킨? 닭강정? 아님 둘 다? 닭가슴살로 만든 완벽한 양념치킨 ...  ).

5. When making the tempura Flour, add garlic powder or onion powder in a similar proportion to the pepper to make it more flavorful.

6. If you can't eat meat, you can use a plant-based meat substitute (Beyond Meat).

7. Instead of chicken breasts, you can use chicken thighs, tenderloins, drumsticks, wings which have more fat and are much more flavorful. Just be sure to double the frying time for bone-in parts like drumsticks and wings.

8. Instead of honey, you can use agave syrup, starch syrup, or maple syrup.

9. If you don't have oyster sauce, add 2 grams of MSG and change the amount of soy sauce to 1.5 T.

10. If you don't have mirin (rice cooking wine), you can add water.

11. Potato starch powder, corn starch, and tapioca starch are all fine.

12. for the flour, all-purpose flour is fine, and if possible, use soft wheat flour as it will fry crispier.

13. the curry powder or cinnamon powder is optional
