Watch this video if you want to know how to make Udon Noodles. This easy and healthy recipe is ready within 10 minutes. I made many variants of this recipe but I think this one is now my favourite! The vegetables I used for this recipe are snow peas, bell peppers, spring onions and a carrot. But you can replace the snow peas for spinach, broccoli or mushrooms.. If you can not find spring onions then use half of a yellow onion or a few slices of leek.
⫸ INGREDIENTS 2 portions
◆ UDON NOODLES (fresh) 300 grams | 11 oz --- if you use dry udon noodles, you need to soak them first in boiled water.
◆ PLANT BASED CHICKEN STRIPS 1 package | 180 grams | 6 oz
◆ VEGETABLE or OLIVE OIL a bit
SAUCE
◆ OYSTER SAUCE 2 tablespoons or use MUSHROOM SAUCE
◆ SOY SAUCE 1 tablespoon
◆ RICE VINEGAR 1 teaspoon or use 1/2 lime
◆ SESAME OIL 1 teaspoon
◆ CHILI FLAKES 1/4 teaspoon
◆ GINGER 1 cm | 0.5 inch
◆ GARLIC 1 clove
VEGETABLES
◆ SNOW PEAS 1 handful | 100 grams | 3.5 oz
◆ CARROT 1 medium size
◆ RED BELL PEPPER 1 small size
◆ YELLOW BELL PEPPER 1 small size
◆ SPRING ONIONS aka SCALLIONS 2 or use a few slices of leek
TOPPING
◆ CORIANDER aka CILANTRO or use a few slices of spring onion to taste
◆ CASHEW NUTS a few per portion
