In this video, I feature my Cinnamon Delight Breakfast Muffins that are a great alternative to eggs and bacon for breakfast. Cinnamon Delight Muffins (makes 12 muffins):
1 cup golden flax meal
4 eggs
1/2 cup avocado oil or coconut oil
1/2 cup brown swerve or confectioners swerve
1/4 cup coconut flour
2 tsp vanilla
2 tsp cinnamon
1 tsp lemon juice
1/2 tsp baking soda
1/8 tsp Himalayan sea salt
1/2 cup Hemp seeds
INSTRUCTIONS:
1. Preheat oven to 325F.
2. Line 12 muffin cups with parchment muffin liners or thoroughly grease unlined muffin pan.
3. Mix all dry ingredients (except Hemp seeds) together and add to mixing bowl
4. Add all liquid ingredients to the dry ingredients in the mixing bowl.
5. Beat with mixer until just moistened throughout.
6. Stir in Hemp Seeds.
7. Fill muffin liners with mixture about 3/4 full.
8. Bake for 18-20 min.
9. Serve with or without a bit of Kerrygold Butter and Enjoy!
