Guar ki Phali
Serves 3-4
Recipe in English:

Ingredients:
-Guar phali (Cluster beans) ½ kg
-Boiling water as required
-Pyaz (Onion) sliced 1 large
-Hari mirch (Green chilies) 2
-Cooking oil ½ Cup
-Lehsan paste (Garlic paste) 2 tbs
-Zeera (Cumin seeds) ½ tbs
-Tamatar (Tomatoes) peeled & chopped 2 medium
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) julienne 2-3
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chili)
-Hara dhania (Fresh coriander) chopped

Directions:
-Cut cluster beans from top and bottom.
-In boiling water,add cluster beans,onion,green chilies and boil for 40-50 minutes then strain & set aside.
-Remove layers of each cluster beans and mash it with the help of the masher & set aside.
-In pot,add cooking oil,garlic paste and fry for 1-2 minutes.
-Add cumin seeds and mix well.
-Add tomatoes and mix well.
-Add salt,red chili powder,turmeric powder and mix well.
-Cover and cook on low flame until tomatoes are soft.
-Now add mashed cluster beans,mix well and cook for 4-5 minutes.
-Add green chilies and mix well.
-Add fresh coriander and mix well.
-Garnish with green chili,fresh coriander & serve.

Ajza:

Directions:
-Guar ki phali ka top aur bottom cut ker lein.
-Boiling pani mein guar ki phali,pyaz aur hari mirch dal dein aur 40-50 minutes kliya boil ker lein & side per rakh dein.
-Guar ki phali mein sa layers ko nikal lein aur masher ki madad sa ache tarhan mash ker lein & side per rakh dein.
-Pot mein cooking oil aur lehsan paste dal dein aur 1-2 minutes kliya fry ker lein.
-Zeera dal ker ache tarhan mix karein.
-Tamatar shamil karein aur ache tarhan mix ker lein.
-Namak,lal mirch powder aur haldee powder dal ker ache tarhan mix karein.
-Dhak dein aur halki ancch per tamatar naram hunay tak paka lein.
-Ab mashed guar ki phali dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Hari mirch dal ker mix ker lein.
-Hara dhania dal ker ache tarhan mix karein.
-Hari mirch aur hara dhania sa garnish ker ka serve karein.
