To Make Batter
Wheat Flour - 1 Cup ( 250 Ml )
Semolina / Sooji - 1/2 Cup
Powdered Sugar - 1 Tbsp
Cardamom Powder - 1/2 Tsp
Fennel Powder - 1/2 Tsp
Boiled Milk - 2 Cups
To Make Sugar Syrup
Sugar - 1 1/2 Cups
Water - 1 1/2 Cups
Saffron
Oil for frying
Method
1. To a bowl, take a cup of wheat flour. Add quarter cup of rava, one tbsp of powdered sugar, half tsp of cardamom powder, half tsp of fennel powder and mix well
2. Add two cups of boiled and cooled milk and mix well using a whisk.
3. Let it sit for 30 minutes.
4. To a sause pan add one and half cup of sugar and one and half cup of water.
5. Once the sugar dissolves and come to a boil, add few saffron strands.
6. Let the sugar syrup boil for 5 minutes. It should be a thick syrup.
7. To a pan, add quarter cup of oil.
8. Once the oil is hot, pour a ladle full of batter to the oil.
9. Fry on one side for five minutes and flip it to the other side.
10. Once it is cooked on both the sides, remove it from the oil.
11. Soak the malpua’s in the sugar syrup for 20 minutes.
12. After 20 minutes, once it is soaked, remove it from the syrup and serve.
13. Garnish with chopped pistachios.
