Pulled Pork Tater Pies are easy to make, packed with flavor, and guaranteed to be a hit around the campfire. ⬇️⬇️RECIPE LINK BELOW ⬇️⬇️
When you're ready for dinner, heat these covered Pulled Pork Tater Pies in an oven, grill, or over a fire until heated through (about 30 min).
Before serving, squirt some extra BBQ sauce and sour cream on top and garnish with some chopped raw green onion. Enjoy!
Pulled Pork Tater Pie Recipe
Ingredients
4 Russett potatoes
Olive oil
Kosher salt
4 Foil disposable pie tins
Cooking spray
Tin foil
8 tablespoons Butter
Salt
Pepper
28 ounces Can baked beans
1 pound Pulled pork w/ BBQ sauce (leftover or already prepared)
2 Shredded sharp cheddar cheese
1 BBQ sauce
Sour cream
Green onions
Instructions
Preheat your oven to 400° F
Instructions
Wash your potatoes and keep the skins on. Poke each potato several times with a sharp knife. Rub each with olive oil, then season generously all over with kosher salt. Bake the potatoes for 60 minutes or until you can slice them open easily and they are tender inside.
Spray each pie tin with cooking spray.
Slice open each baked potato and open it like a book. Place it into the prepared pie tin. Smash the baked potato down to cover the bottom of the pie tin. Smash two tablespoons of butter into each smashed potato. Season with salt and pepper.
Top the seasoned smashed potato with baked beans, pulled pork, and cheddar cheese (the amounts of toppings are ALL up to you).
Cover with tin foil and set aside until you're ready to eat!
