Veg Pulao Recipe
Ingredients:
400 grams Basmati Rice
4 tablespoon Oil
1 large Onion, sliced
1 tablespoon Ginger-Garlic Paste
8-9 Green Chilli, chopped
1 teaspoon Cumin Seeds
2 Bay Leaves
4 Green Cardamoms
4 Cloves
1 inch Cinnamon Stick
1 teaspoon Turmeric Powder
Salt to taste
3 cups Water
1 cup Mixed Vegetables (carrots, peas, beans, cauliflower)
Fresh Coriander Leaves for garnish
Instructions:
Rinse the rice thoroughly in water and soak in water for 30 minutes. Drain the water and set aside.
Heat oil in a large pot or pressure cooker. Add cumin seeds, bay leaves, green cardamoms, cloves, and cinnamon stick. Fry for a few seconds until fragrant.
Add sliced onions, chopped green chilli, and ginger-garlic paste. Saute until the onions turn golden brown.
Add mixed vegetables and saute for 2-3 minutes.
Add the soaked rice, turmeric powder, and salt to taste. Stir gently and saute for 2-3 minutes.
Add water and mix well. Cover the pot with a lid and cook on low heat for 15-20 minutes, or until the rice is cooked and the water has been absorbed.
Turn off the heat and let the pulao rest for 5 minutes.
Fluff the rice with a fork.
Garnish with fresh coriander leaves and serve hot with raita or any side dish of your choice.
