This breakfast is one of my favorite to make in advance! It's easy and delicious!

Ingredients
8 eggs
salt/ pepper to taste
1/2 onion
red bell pepper
basil (optional)
2 breakfast sausage links or bacon
1/2 cup cottage cheese or sour cream ( milk or heavy cream can also be added. I love 1/4 cup of heavy cream in this but did not have it that day.)
butter
kabocha squash

Note: other veggies can be used like cherry tomatoes, spinach, sundried tomatoes, kale, or sauteed mushrooms, cabbage. use whatever is available to you that you think will make a nice combo. cheese can also be added; nice picks are goat cheese or cheddar cheese.
