I Tried Making VIRAL TIKTOK CEREAL RECIPES (But Vegan!) | Are They Worth Making?!

I've seen these viral TikTok cereal recipes floating around, so I just had to try them...but obviously had to make them vegan! These TikTok cereal hacks actually ended up turning out pretty good. I would definitely recommend trying them yourself!

MINI COOKIES:
1 can chickpeas (drained and rinsed)
1/4 cup gluten free oats
1/4 cup gluten free flour*
1/4 cup+ a little or nut butter
1/4 cup maple syrup
1/2 tsp baking powder
1/2 tsp baking soda

2 tbsp corn starch
Sprinkle pink salt
1 tsp vanilla extract
1/8 tsp almond extract (optional)
1/2-1 cup vegan mini chocolate chips (really just however many you want)

Place all ingredients except the chocolate chips in a food processor and blend until thick and smooth. Transfer to a bowl and put in freezer for about 30 minutes. Form until small round balls and place in air fryer basket. Smash cookie dough balls until flat (about the size of a nickel). Bake in air fryer at 370 for 10-13 minutes.
For the oven, do the same process as the air fryer but bake at 350 for 15-20 minutes or until golden brown and crispy.

MINI BROWNIES:
1 sweet potato
1/3 cup unsweetened cacao chips or 2 oz unsweetened baking cocoa bar
1/3 cup nut or seed butter
1/4 cup oat flour
1/4 cup gluten free flour
1/2 cup cocoa powder
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1 cup vegan mini chocolate chips
1/2 cup chopped pecans

Roast the sweet potato at 425 for about 45-60 minutes. Let cool and peel the skin off.
Preheat oven to 350 and line a 9x13 baking dish with parchment paper.
On a stove top in a small sauce pan, melt the cacao chips or baking chocolate bar and nut butter together mixing until smooth and uniform. Set aside until ready to blend.
In a food processor, add in ALL ingredients except for the chocolate chips and chopped pecans. Blend together until smooth. Remove the blade from the food processor and fold in some of the pecans and mini chocolate chips. Spread the batter evenly into a prepared baking dish. Sprinkle with extra pecans, chocolate chips, and pink salt. Bake in the oven for about 25-30 minutes Take out of the oven, cool, and slice into small cubes to resemble cereal.

MINI PANCAKES:
1 cup King Arthur Gluten Free Pancake Mix
1 tbsp egg placer + 2 tbsp water
1 tbsp vegan butter
2/3 cup unsweetened almond milk

Whisk all wet ingredients together in a bowl. Add in pancake mix and whisk together until smooth. Heat griddle or pan and use a bottle with a tip to squirt dots of pancake mix onto the griddle or pan. Wait until you see the mini pancakes start to bubble and flip over to cook on other side.
