1. Add 1.5 cups of ~175g of AP flour to a mixing bowl.
2. Stir in 1/3 cup of ~90 g boiling water
3. Continue to mix until the water is stirred in to the flour and knead
4. Add 1.5 cup or ~60g of AP flour
5. 2 Tsp or 10g filtered water
6. Knead until the dough comes together into a round ball
7. Wrap it up and set aside in fridge for 30 minutes
8. Cut scallions (I also used shallots and parsley too)
9. Divide dough into 4 pieces
10. Turn each one into little rounds and roll it out thin
11. Spread some sort of fat on top (I used coconut oil but you can use butter or schmaltz too)
12. Season with salt
13. Add the greens and herbs
14. Roll it up tight and then coil into swirls
15. Wrap and set aside for 20 minutes
16. Roll each twist out until they're flat pancake
17. Fry them in a hot pan
18. Optional: fry some eggs serve on top of the pancake. Add any leftover scallions to put on top.
