This is my super easy, step-by-step Nyonya chicken curry recipe. It is also known as "Kari Kay" in Southeast Asia.
Ingredients
01. Chicken (1 to 1.5kg)
02. Potatoes (300g-400g)
03. Turmeric (1 to 2 tsp)
04. Cumin (1 to 2 tsp)
05. Coriander (2 to 3 tsp)
06. Fennel Seeds (1 to 2 tsp)
07. Dried Chillies (5 to 15)
08. Shallots (3 to 4)
09. Garlic (3 to 4 cloves)
10. Star Anise
11. cloves (3 to 4)
12. cinnamon stick
13. Shrimp Paste (2 to 4 tsp)
14. Sugar (2 to 3 tsp)
15. Salt (1 to 2 tsp)
Nyonya (or "Nonya") Cuisine combines many culinary traditions and influences from the Malay, Chinese, Indian and Europeans. Nonya chicken curry is a classic of Nyonya cooking and it is extremely popular in Singapore, Malaysia and Indonesia.
It is often eaten during weddings and birthdays and Kari Kay is considered one of the eight main dishes served during the feasting on the eve of a Peranakan wedding.
Nyonya chicken curry is a mild and fragrant curry that combines chicken and potatoes and it is an extremely handy dish to have in your repertoire. It is relatively quick to make and it is ideal for parties and large gatherings because you can make it in bulk in advance and heat it up just before serving.
I got all the ingredients from my local Sainsbury's supermarket except for the shrimp paste which I got online from Amazon. If you are not familiar with Shrimp paste, is a fermented shrimp/krill condiment commonly used in Southeast Asian and Southern Chinese cooking. It adds a wonderful, strong umami taste to all dishes and you can add it to curries, stir-fries and fried rice dishes.
If you are unsure about it, you can omit it from this Nyonya chicken curry dish but, if you love flavour, I would suggest that Shrimp Paste is a condiment definitely worth discovering.
Traditionally, this Nyonya chicken curry recipe is served with Nasi Kunyit (Turmeric Rice) or Roti Jala (a Malay crepe/pancake) but it goes just as well with boiled white rice or crusty bread.
