Burrito Bowl! 🌯🥣

Rice
1 cup rice
1/3 cup finely chopped cilantro
1 lime juiced
2 Tbsp butter
Salt to taste
Beans
2 strips bacon chopped
1/2 onion diced
1 jalapeno diced
1 can black beans
1/2 cup chicken stock
1 tsp cumin
1 tsp chili poweder
S&P to taste
Fajitas Veggies
1 red pepper julienned
1 yellow onion julienned
2 Tbsp butter
S&P
1/2 tsp cumin
Steak
1 New York Strip steak (about 1 lb)
2 tsp avocado oil
S&P
2 Tbsp butter
Sauce
1/3 cup mayo
1/3 cup sour cream
2 Tbsp liquid from canned chipotle peppers
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 lime juiced
S&P
Other Toppings
1 avocado sliced
chopped cilantro
8 oz grated Monterey Jack cheese
Method
Rice
Once your rice is cooked, add cilantro, salt, lime and butter. Mix until butter is melted and keep warm.
Beans
In a medium pot, over medium heat, add bacon. Cook until brown and cripsy 8-10 minutes. Remove bacon from pan, but leave the fat. Then add onions and jalapeno and saute for 3-4 minutes or until softened. Next, add garlic and cook for 30 seconds. Then add beans, chicken broth, cumin, chili powder, salt and pepper. Return the bacon to the pan and let simmer for about 20 minutes.
Fajita Veggies
In a saute pan, over medium heat, add butter. Once melted, add pepper and onions. Immediately season with S&P then saute for 5 minutes until softened and starting to get some color. Add cumin and set aside.
Steak
Rub your steak with oil on both sides. Then season generously with S&P on both sides. Heat a frying pan over high heat for 3 minutes. Then add your steak and press firmly for full pan contact. Let sear undisturbed for 2-3 minutes. Once you have a beautiful crust, flip and add butter and baste until medium rare. Remove from pan and let rest for 10 minutes.
Sauce
Add all sauce ingredients to a bowl and mix until combined. Check for seasoning and set aside.
To assemble, add rice, bean, fajita veggies, steak, cheese, avocado, and sauce. Lastly, garish with cilantro and lime juice and enjoy!!!
