I pat mine dry with a paper towel and then season very generously with salt, pepper, garlic powder and onion powder (or whatever spices you like). I added an onion and some smashed garlic cloves to my dish for even more flavor. Cover and cook on 325 an hour per pound. I served mine with mashed potatoes, gravy and a chopped salad. Next time I want to try searing it first but this was delicious all the kids ate it and there were no leftovers!
