Gingerbread Cookies Recipe
Ingredients (for 40 biscuits):
• 460 g icing sugar
• 360 g butter
• 60 g eggs
• 200 g milk
• 8 g baking powder
• 6 g salt
• 12 g ginger powder
• 2 vanilla pods
• 1 kg weak white flour (biscuit flour)
Preparation:
1. Mix the soft butter with the icing sugar and salt. Add the inside of the vanilla pods and mix well.
2. Add the eggs and milk, which have been previously mixed together, and combine well.
3. Add the sifted flour, baking powder, and ginger powder. Mix everything to form a smooth dough.
4. Leave the dough to rest in the fridge, covered with cling film, for at least 4 hours.
5. Roll out the dough to 3 mm thickness and cut into shapes as desired.
6. Bake in a preheated oven at 170°C for 16-18 minutes.
7. Once cooled, decorate with white or colored royal icing.
White Icing:
• 200 g egg whites
• 1000 g powdered sugar
• 5 g lemon juice
