Zucchini caviar for the winter recipe from the USSR in accordance with GOST. Delicious Homemade Zucchini Caviar.
Zucchini caviar RECIPE:
2 kg of courgettes (without peel and seeds)
120 g carrots
80 g onions
90 g vegetable oil
190 g tomato paste
1 g ground black pepper
1 g allspice ground pepper
10 g salt
20 g sugar

Zucchini caviar PREPARATION:
I peel the washed zucchini. I cut it in half lengthwise and take out the seeds. If the zucchini is young, the seeds can be left. I cut the peeled zucchini into cubes. On a coarse grater, grate the carrots and cut the onions into small cubes.
Pour some oil into a large frying pan and fry all the zucchini until they are lightly transparent. I had to do this in two steps, since all the zucchini at a time did not fit in the pan. Put the fried zucchini in a large saucepan. At the same time, in another pan, I fry the onion in vegetable oil first until golden brown, then add carrots to it and continue to brown the vegetables until tender. I put them in a saucepan with zucchini.
Then, with an immersion blender, I thoroughly grind all the vegetables in puree. Then I put the pan with zucchini puree on a small fire, be sure to cover it with a lid, since the mashed potatoes shoot quite hard, releasing steam. I will simmer for 40 minutes. After the allotted time, add tomato paste and spices to the squash puree. Stir thoroughly and continue simmering under the lid for another 20 minutes. During this time, I sterilize the jars. I pour hot squash caviar into jars, close the lids tightly and, turning the jars upside down, leave them to cool completely. The squash caviar is ready.
