Mac Pro 5,1 and Big Sur 11 6 3, revisited!
I bought a PCIe adapter card for dual NVME SSD's on Amazon. They were made by Micro SATA Cables.
Note, I am not saying that they make a poor product. However, for the limited use scenario of using one on a Mac Pro 5,1, with a patched modern OS, they do cause serious boot problems. I bought 2 so that you didn't have to buy any.
