Illustrator allows you to place objects within your documents. The good thing about Illustrator that it can support a variety of file formats. You can put rasterized images like JPEGs, PNGs and vector graphics such as PDFs and Illustrator native files too within Illustrator.

When you place an image into Illustrator, you can either choose to link or embed the image:

Linked Images:
• Remain dependent on the Illustrator file
• If handing off to a client, both the pictures & Illustrator file need to be given or you will get missing links (broken links) and the images will appear pixelated
• The file size is smaller
• Edit your linked images in another application such as Photoshop and the edits will automatically be applied to the linked image within the Illustrator document

Embedded Images
• A fixed image within Illustrator
• Image is placed at full resolution
• Creates a larger file to save
• Not necessary to give the image to a client as the image is embedded in the document
• Will need to update links if any updates the images from Photoshop

Depends on what you are planning to do with the file
• If this is for a logo, I will place the image either embed or link, knowing that I would delete this image from the file when I no longer need it. I would re-create the logo by drawing it out or trace it by hand or by Illustrator, to create a clean, crisp logo.

• If I was creating an infographic, and I need to give this to a client, I would embed the image, so the client doesn't need to worry about the missing image.

• If I was creating an infographic and my teammate will finish the design, I would link the image so it would be easier to work with on the shared server.

Different scenarios, different situations. There is no wrong or right way.
